Today I came back with my drawn recipes. The previous post was about gazpacho, a very famous cold soup made of vegetables, a very typical dish from Andalusia. Now I bring to you, salmorejo, this is a cold cream of vegetables, typical from my hometown, Cordoba (Andalusia).
Bread from the previous day (hard bread and very dense)
Tomatoes, four, very red and ripe
Garlic, 2 pieces
1.- Put the bread in water for 5 minutes.
2.- Put bread, tomatoes and garlic in a blender. Drop some olive oil (less than a glass) and some salt.
3.-You can add some vinegar during the process, very few drops. It depends on your taste.
4.- Grind until everything is a cream. There shouldn´t be too much taste of olive oil.
5.-Strain the cream.
6.- Serve it cold with ham (jamón), a bit more of olive oil, and hard boiled egg.
That is the original recipe, but during the last years, many people have changed some ingredients. For example they use beetroot, red peppers or even strawberries instead of tomatoes.
You can combine salmorejo with other dishes like tortilla española, Spanish omelette, or flamenquin, another typically Cordoban dish. However, these are other recipes, and other posts.
